- 3 Large eggs, beaten
- 3-6 Tbsp Water
- 2 tsp Olive oil
- 3 cups Whole wheat, kamut, or spelt flour
- 1 tsp Salt
Place flour in large mixing bowl and make a well in the center. Pour eggs, oil, and 3 Tbsp water into the well. Mix with a fork, adding additional water if needed until a soft dough is formed. Remove dough and knead for 8-10 minutes on a lightly floured surface. Cover and let rest for 30 minutes. Feed dough into the Bosch pasta attachment or a free-standing pasta machine. Separate pasta strands or shapes and lay them on a clean kitchen towel, dusted lightly with flour. Drop pasta into boiling water and cook until al dente. Serve immediately.
