- 3/4 cup melted butter
- 1 1/2 cups sugar
- 1 1/2 tsp vanilla
- 3 eggs
- 3/4 cup flour
- 1/2 cup cocoa powder
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 cup softened butter
- 1 cup powdered sugar
- 1 tbsp milk
- 3/4 tsp peppermint extract
- green food coloring
- 1/4 cup butter
- 1/2 cup semi-sweet chocolate chips
Mint layer + Chocolate Layer
Brownies: Preheat oven to 350F. Grease 9×9 baking pan.
Mix butter, sugar, and vanilla. Add eggs and mix until combined.
Add in flour, cocoa, baking powder, and salt.
Pour batter into the pan and spread evenly.
Bake 25-30 minutes or until a toothpick inserted into brownies comes out clean. Let cool.
Mint frosting: Beat butter until smooth and creamy. Add powdered sugar and milk. Beat again until well combined. Add the extract and food coloring and beat for another minute. Taste and add more extract if desired. Frost cooled brownies. Keep in the refrigerator for 1 hour.
Chocolate layer: Melt the butter and chocolate in the microwave, stirring after each 20-second interval until smooth. Pour over the mint layer and carefully spread. Store in the refrigerator until ready to serve.
