Ingredients

2 cups lukewarm water

2 cups lukewarm milk

2/3 cup granulated sugar

2 tablespoons instant yeast

4 cups freshly milled whole wheat flour

8 cups all-purpose flour

3/4 cup melted butter

2 tablespoons salt

Steps

Step 1: Mill the Wheat

  1. Mill the wheat: Feed soft white wheat berries into the Classic grain mill hopper. Grind the wheat until you have 4 cups of fresh milled whole wheat flour.

Step 2: Prepare the Dough

  1. Mix liquids and yeast: In the bowl of your Bosch mixer, add 2 cups of lukewarm water, 2 cups of lukewarm milk, and 2/3 cup of granulated sugar. Sprinkle two tablespoons of instant yeast over the liquid mixture. Let it sit for about 5-7 minutes until the yeast starts to bubble, indicating that it is active.
  2. Add freshly milled flour: Add the 4 cups of freshly milled whole wheat flour to the mixer. Turn the Bosch mixer to a low speed and mix until the flour is well incorporated.
  3. Incorporate all-purpose flour: Gradually add the 8 cups of all-purpose flour, 1 cup at a time, allowing each cup to thoroughly mix in before adding the next. Continue mixing at speed 2.
  4. Add melted butter and salt: Slowly pour 3/4 cup of melted butter and two tablespoons of salt into the bowl.
  5. Knead the dough: Once all ingredients are well combined, let the Bosch mixer knead the dough for about 5-8 minutes on speed two. The dough should be smooth and elastic and pull away from the sides of the bowl.

Step 3: First Rise

  1. Let the dough rise: Turn off the mixer and let the dough rise in the bowl; keep the lid unlocked for more room to rise in the mixing bowl. Allow the dough to rise in a warm place for about 45 minutes to an hour or until it doubles in size.

Step 4: Shape and Second Rise

  1. Prepare the pans: Grease 4 standard loaf pans (8.5 x 4.5 inches) or line them with parchment paper.
  2. Shape the dough: Once it has doubled, punch it down to release the air. Divide the dough into four equal parts. Shape each portion into a loaf and place them in prepared pans.
  3. Second rise: Cover the pans with a kitchen towel and let the dough rise again for about 30-45 minutes, or until the loaves have risen above the edges of the pans.

Step 5: Bake the Bread

  1. Preheat the oven: Preheat your oven to 375°F (190°C).
  2. Bake: Bake the loaves in the oven for 30-40 minutes or until the tops are golden brown and the bread sounds hollow when tapped on the bottom.
  3. Cool the bread: Remove the bread from the oven and brush the tops with melted butter. Let the loaves cool in the pans for about 10 minutes. Then, transfer them to a wire rack to cool completely before slicing.
