1 cup active peaked sourdough starter

2 ½ cups lukewarm water

8 cups all-purpose flour (start with 7 ½ cups and add more as needed)

In your Bosch mixer bowl, add softened butter, honey, salt, sourdough starter, and water. With the mixer running on low speed, slowly add about 7 ½ cups of flour, allowing it to incorporate gradually. Keep the last ½ cup aside so you can adjust as needed for dough texture.
Using the dough hook, increase the Bosch mixer to speed 2 and knead for 6–8 minutes, adding small amounts of flour if the dough is too sticky. The dough should be smooth, elastic, and pull away from the bowl. It should pass the windowpane test.
Cover the dough and let it rise in a warm place for 10–12 hours, or until doubled and airy.
Turn the dough onto a lightly floured surface and divide into two equal portions. Working with one portion at a time, roll the dough out to release all large air bubbles and flatten into a rectangle. Fold the long sides inward toward the center like a gatefold. Then roll the dough up tightly from the short end. Pinch the ends underneath to seal, then place the shaped loaf into your prepared enameled cast iron bread pan.
Cover and let rise for 2–4 hours, until nearly doubled.
Preheat oven to 375°F (190°C). Bake for 40–45 minutes, until golden and hollow-sounding when tapped.
Remove loaves from pans and brush tops generously with melted butter while still warm. Cool fully before slicing to prevent a gummy crumb.
