Directions
Mill Ezekiel flour blend in NutriMill Grain Mill
In the bowl of a Bosch stand mixer, add the warm water, honey, and yeast. Let sit for 5–10 minutes, until foamy.
Add olive oil, egg, and salt. Add 2 cups of flour and mix until smooth.
With the mixer running on speed 2–3, add the remaining flour ½ cup at a time until the dough pulls away cleanly from the sides of the bowl.
Knead in the Bosch for 8–10 minutes, until the dough is smooth and elastic.
Place the dough in a greased bowl, cover, and let rise until doubled in size, about 1 ½–2 hours.
Punch down the dough, then shape by folding each side inward like a tri-fold, rolling tightly into a log, and pinching the seams and ends closed. Place into a greased enameled cast iron bread pan.
Cover and let rise again until the dough is just above the rim of the pan.
Preheat the oven to 350 °F and bake for 30–35 minutes, until golden brown and the loaf sounds hollow when tapped.
Remove from the pan immediately and cool on a wire rack. Allow to cool completely before slicing.
