Ingredients

1 cup freshly milled hard red wheat flour

1 cup freshly milled hard white wheat flour

1/2 cup freshly milled spelt flour

1/2 cup freshly milled barley flour

1/4 cup freshly milled rye flour

1/4 cup freshly milled oat flour

2 1/4 teaspoons instant yeast (1 packet)

1 1/2 teaspoons salt

1 tablespoon honey

1 tablespoon olive oil

1 1/4 cups warm water (110-115°F)

Optional: 1/4 cup mixed seeds (sunflower, flax, pumpkin, and chia) for topping

Directions
In the Bosch or Artiste mixer, combine the freshly milled flours: hard red wheat, hard white wheat, spelt, barley, rye, and oat. Mixer to combine.
Add the instant yeast and salt to the flour mixture, mixing to distribute evenly.
In a separate bowl, combine the honey, olive oil, and warm water. Mix until the honey dissolves.
Gradually pour the liquid mixture into the flour mixture, mixing until a rough dough forms.
Knead with Dough Hook for 10-12 minutes, until the dough becomes smooth and elastic. If the dough is too sticky, add a little more flour, one tablespoon at a time.
Shape the dough into a ball and place it in a lightly greased bowl. Cover with a clean kitchen towel and let it rise in a warm place for 1 1/2 - 2 hours, or until it doubles in size.
Once the dough has risen, gently deflate it and shape it into a loaf. Place the loaf in a greased 9x5-inch loaf pan.
If using seeds for topping, brush the top of the loaf with a little water and sprinkle the seeds evenly over the surface, pressing them lightly into the dough.
Cover the loaf with a clean kitchen towel and let it rise again for 45 minutes to 1 hour, or until it has risen about 1 inch above the rim of the pan.
Preheat your oven to 375°F (190°C) while the dough rises.
Bake the loaf in the preheated oven for 35-40 minutes, or until the bread is golden brown and sounds hollow when tapped.
Remove the bread from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
