Directions
Step 1: Attach the citrus juicer to your Bosch Universal Plus Mixer. Wash and halve about three medium lemons. Juice them using the Bosch juicer, which will automatically filter out seeds and pulp. Measure out 125 ml (½ cup) of fresh lemon juice.
Step 2: In a mixing bowl, combine the lemon juice with 150 g (¾ cup) of granulated sugar. Stir until the sugar begins to dissolve. Add 250 ml of heavy cream and then 250 ml of whole milk. Stir the mixture thoroughly until the sugar is fully dissolved and the base is smooth.
Step 3: Set up the Bosch Ice Cream Maker by placing the metal ice cream bowl into the Bosch mixer bowl. Before adding the gelato mixture, carefully pack ice and rock salt around the outside of the metal bowl. This ensures the cooling process starts immediately and prevents any rock salt from getting into the gelato.
Step 4: Pour the prepared lemon mixture into the center metal bowl of the ice cream maker. Attach the lid and dasher, then turn the Bosch mixer to speed 3.
Step 5: Allow the gelato to churn for 30 to 45 minutes, or until it reaches a thick, creamy consistency. Once finished, you can serve the gelato immediately for a soft texture or transfer it to an airtight container and freeze for 1 to 2 hours for a firmer scoop.
