Ingredients

1 cup (240g) NutriMill's Perfectly Fresh Sourdough Starter, active and bubbly

1 1/2 cups (360ml) lukewarm filtered water

4 cups (480g) all-purpose flour, freshly milled using a NutriMill grain mill

1 1/2 teaspoons (9g) fine sea salt

Cornmeal or semolina, for dusting

Directions
In the Artiste Mixer or Bosch Mixer combine the active sourdough starter and lukewarm filtered water. Mix well to combine.
Gradually add the freshly milled all-purpose flour and fine sea salt to the starter mixture, mixing until a shaggy dough forms. If the dough seems too dry, add a little more water, a tablespoon at a time.
Transfer the dough to a clean, lightly floured surface and knead for 10-12 minutes or until the dough becomes smooth and elastic.
Shape the dough into a ball and place it in a lightly greased bowl, covering it with a clean cloth or plastic wrap. Allow the dough to rise at room temperature for 4-6 hours or until it has doubled in size.
Once the dough has risen, gently deflate it and shape it into a round loaf or your desired shape. Place the shaped dough onto a parchment-lined baking sheet dusted with cornmeal or semolina to prevent sticking.
Cover the dough loosely with a clean cloth and let it rise for another 2-3 hours or until it has noticeably puffed up.
Preheat your oven to 450°F (232°C) and place an empty, oven-safe pan or cast-iron skillet on the bottom rack to preheat.
Just before baking, use a sharp knife or lame to score the surface of the dough with a few shallow slashes, allowing it to expand during baking.
Carefully pour 1 cup (240ml) of hot water into the preheated pan or skillet to create steam, and quickly close the oven door to trap the steam.
Bake the bread for 25-30 minutes, or until the crust is golden brown and the loaf sounds hollow when tapped. For a crispier crust, remove the pan with water halfway through baking.
