Eva's whole wheat flour tortillas are made with fresh milled flour and are only 4 ingredients! They are soft, flexible, and so good you’ll want to eat them straight off the pan.

Ingredients

1 cup freshly milled whole wheat flour

30g shortening (Lard, Butter, Tallow)

5g salt (about 1 tsp)

Hot water, as needed
Directions
Mill your wheat berries using the NutriMill Harvest Grain Mill to make 1 cup of fresh whole wheat flour.
In a small bowl, stir the salt into hot water until fully dissolved. Set aside.
Add the shortening to the flour and work it in with your hands until it resembles coarse crumbs.
Slowly pour in the hot salt water mixture, a little at a time, mixing everything together with your hands.
Once the dough comes together, knead it briefly and form it into a ball.
Divide the dough into small balls, then roll out each ball on a floured surface, using plenty of flour to prevent sticking, until they are thin rounds. (Flip after each roll - see video for reference)
Cook each tortilla on a very hot skillet or pan for 30–45 seconds per side, until bubbles form and light golden spots appear.
Stack finished tortillas in a clean towel to keep them soft. Serve warm or store in an airtight container.
Recipe Note
The key to a beautifully rolled out tortilla, is lots of flour, roll flip roll flip then repeat!
