Ingredients

2/3 Cups Warm Milk

4 Tbsp Brown Sugar

3 tsp Instant Yeast

1 Large Egg

1 Cup Pumpkin Puree

4 1/4 Cups Flour

1 1/4 tsp Salt

1 tsp Cinnamon

1 tsp Ginger

1/2 tsp All Spice

1/2 tsp Coriander

1/4 tsp Nutmeg

1/3 Cup Butter *Softened

Directions
Activate the Yeast:
Combine the warm milk and two tablespoons of brown sugar in the mixing bowl. Stir to dissolve the sugar.
Sprinkle the Yeast over the milk and let it sit for about 5-10 minutes or until it becomes frothy.
Mix the Wet Ingredients:
Add the remaining brown sugar, the egg, and the pumpkin puree to the yeast mixture. Stir until well combined.
Combine Dry Ingredients:
Combine the flour, salt, and all the spices (cinnamon, ginger, allspice, coriander, and nutmeg).
Form the Dough:
Gradually add the dry ingredients to the wet mixture and knead until the dough is smooth and elastic. This should take about 5-7 minutes.
Add the softened butter gradually and knead until fully incorporated.
Let the Dough Rise:
Close the bowl cover and let it rise for about 1-1.5 hours or until it has doubled.
Shape the Pumpkin Rolls:
Punch down the dough and divide it into equal-sized portions (about 12-14 portions for a standard batch).Shape each portion into a round ball.
Create Pumpkin Shapes:
To make pumpkin shapes, use the 100% cotton string to tie around each dough ball. This creates the "sections" of the pumpkin.
Let Them Rise Again:
Cover the shaped rolls on a baking sheet lined with parchment paper. Allow the rolls to rise for another 30-45 minutes.
Preheat Your Oven:
Preheat your oven to 350°F (175°C).
Bake the Pumpkin Rolls:
Bake the rolls in the oven for 20-25 minutes or until golden brown.
Decorate with Walnuts:
While the rolls are still warm, cut off the cotton strings.
Gently press a walnut piece into the center of each roll to resemble the pumpkin stem.
