Directions
In the Bosch or Artiste mixer, dissolve the yeast in warm water. Let sit for 5 minutes until the yeast is foamy.
Add honey, olive oil, and salt to the yeast mixture and mix to combine.
Gradually add the whole wheat flour, amaranth flour, and all-purpose flour while mixing the dough with a stand mixer or by hand. Mix until the dough becomes smooth and elastic.
Cover the bowl with a damp cloth or plastic wrap and let the dough rise for 1 hour or until it has doubled in size.
Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
Dust a clean work surface with flour and transfer the risen dough to the surface. Knead the dough for 2-3 minutes, then shape it into a loaf.
Place the loaf on the prepared baking sheet and let it rise for another 20-30 minutes.
Using a sharp knife, score the top of the loaf with 2-3 slashes.
Bake the bread for 30-40 minutes or until the crust is golden brown and the bread sounds hollow when tapped.
Remove the bread from the oven and let it cool on a wire rack before slicing and serving.
