There's something nostalgic about mint chip, and this version made in the NutriMill Ice Cream Maker leans into that: fresh mint leaves steeped right into the base to create a clean, natural mint flavor, studded throughout with dark chocolate chips. It's a refreshing, year-round favorite that never goes out of style.
Ingredients
- Vanilla Junket Ice Cream - 1 ¼ cups of whole milk + ¾ cups heavy cream (x2 boxes)
-
A handful of fresh mint leaves
-
Dark chocolate chips, to taste
Directions
Heat the milk and heavy cream in a saucepan until warm (not boiling).
Add the fresh mint leaves and let steep for 2 hours off the heat.
Strain out the mint leaves and discard.
Chill the steeped milk and cream mixture until cold.
Whisk in the 2 boxes of Junket vanilla mix until fully combined.
Assemble the NutriMill Ice Cream Maker attachment: place it in your mixer bowl, then pack the outside of the stainless steel ice cream bowl with alternating layers of ice and rock salt.
Pour the chilled mint mixture into the stainless steel bowl, attach the paddle, and secure the lid.
Set your mixer to speed 2-3 and churn for 20-30 minutes.
In the last few minutes, add the dark chocolate chips through the lid's inlet.
Once thickened to soft-serve consistency, transfer to a container and freeze until firm, or enjoy right away.
